Sullivans Cove French Oak Single Tawny Cask Tasmanian single malt whisky is aged in 300L French oak casks previously used to mature Australian tawny port-style fortified wine, this whisky has rich flavours of Christmas spice, chocolate, dried fruit and complex oak. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.

Aged for thirteen years in a 300 litre, French oak ex-Tawny cask, TD0216 is a classic example of the Sullivans Cove French oak ex-Tawny style. Bottled unflocked and unfiltered at 47.6% abv this cask produced a mere 293 bottles.

Nose: This smells like an old Aussie French Oak Tawny cask! Gingerbread, walnuts and pistachios. Grain: Weetbix, dry barley, dusty sweet earthiness… Popcorn. The grains lead into burnt butter, which then turns to a lovely tropical character. There’s baking apricots, prunes, glacé cherries and white pepper.

Palate: Silky texture and a lot of yummy juicy fruits. Mandarin, peaches and cranberries all culminate in the glorious childhood memory of fruit winders. Prunes and a lot of cocoa further develop into white chocolate, macadamia and glazed pastry. Structurally excellent and typically French Oak: a tight, yet gentle and balanced grip.
