Michel Couvreur had a very personal and truly revolutionary vision of what whisky should be: more than terroir, more than the distiller’s touch, it was the maturing in oak casks that truly helped the grain spirit become whisky. From 1978 on, having settled in the French region of Burgundy, he decided to make it his life’s work and to dedicate his research to a process which he once compared to cross-fertilisation. Michel Couvreur sadly passed away in 2013; but his son-in-law Cyril Deschamps and his cellar master Jean-Arnaud Frantzen, with the invaluable help of Michel’s devoted wife Marthe and his daughter Alexandra, follow to the letter the philosophy and the motto of the house: Virtute et Opera. Taking Scottish distilled spirit, but then aging and maturing it in meticulously sourced casks and left to rest in the unique conditions created in their cellars in the Burgundian region of France produce single casks of exceptional quality whisky. Distilled in Scotland on the 17th November 2000 and aged over 22 yrs in wood including special finishing and further maturation in a sweet px sherry cask. Specially selected and bottled at cask strength of 52.5% abv on the 11th May 2023 to celebrate 45 years of Amathus. Each bottle is hand-corked, hand-waxed and hand-labelled for a truly original release.
